1 1/2 pounds fresh asparagus
3/4 cup water
1/4 cup orange juice
2 tablespoons Italian salad dressing
1 teaspoon grated orange peel
1/2 teaspoon cornstarch
Wash asparagus thoroughly; snap off base of stalks (they will snap just between the tender and tough portions).
In large saucepan or Dutch oven, bring water to a boil. Place asparagus in boiling water. Cook over medium heat 6 to 8 minutes or until crisp tender, drain well.
Meanwhile, in small saucepan combine remaining ingredients; blend well. Cook over medium heat until mixture boils and thickens, stirring occasionally. Pour over cooked asparagus.
MICROWAVE DIRECTIONS:
Wash asparagus thoroughly and snap off base of stalks as directed above. Place asparagus and water in 13x9-inch (3 qt.) microwave safe dish. Microwave on HIGH for 5 to 7 minutes or until crisp tender. Drain well. In 1 cup microwave safe measuring cup, combine remaining ingredients. Microwave on HIGH for 1 to 1 1/2 minutes or until sauce thickens, stirring once halfway through cooking. Pour over cooked asparagus.
