Recipe: Slow Cooker Sweet Potato Casserole with Brown Sugar-Pecan Topping

SLOW COOKER SWEET POTATO CASSEROLE

2 cans (18 oz each) sweet potatoes, drained and mashed
1/3 cup plus 2 Tbsp. margarine or butter, melted, divided use
2 Tbsp. granulated sugar
1/3 cup plus 2 Tbsp. brown sugar, divided use
2 eggs, beaten
1/2 cup milk
1 Tbsp. orange juice
1/3 cup chopped pecans
2 Tbsp. flour

Lightly grease slow cooker.

Mix sweet potatoes, 1/3 cup margarine, sugar, and 2 tablespoons brown sugar in large bowl. Beat in eggs, milk and orange juice. Transfer to slow cooker.

Combine pecans, remaining 1/3 cup brown sugar, flour and remaining 2 tablespoons margarine. Spread over sweet potatoes.

Cover and cook on high 3 to 4 hours. Serve.

Makes 6-8 servings
