Spicy Sweet Potato Wedges
3 large (2 pounds total) scrubbed sweet potatoes, cut into 1/2-inch wide wedges
1 tablespoon vegetable oil
1 teaspoon sugar
1 teaspoon chili powder
3/4 teaspoon salt
2 tablespoons maple syrup
1 teaspoon cider vinegar.
Heat oven to 475 degrees F.
Toss the sweet potato wedges with vegetable oil, 1 teaspoon sugar, chili powder, and salt. Spread on lightly greased baking sheet.
Roast 15 to 20 minutes, shaking once during cooking. Drizzle with maple syrup mixed with cider vinegar.
