Recipe(tried): Springerlee Cookies

Desserts - Cookies, Brownies, Bars
Glad to share my recipe for Springerlees I got from a 2nd generation Italian friend.

Single batch: appx. 50 cookies. Bake 300 to 325 deg. for 20 minutes.

4 eggs - beaten 10 min.
Add 1# confectioner sugar
Rind (no white pith) and juice from 1 large lemon
4-1/2 C. all purpose flour
1 tsp. baking powder
Anise oil - appx. 1/4 tsp. (this is a powerful oil that can be purchased at a
drug store or candy-making supply store)

Mix above and set in a cool room for 24 hours; then roll.

She used a Springerlee rolling pin with the imprints carved into the rolling pin.
