Recipe(tried): Strawberry Cookies with Variations (using cake mix)

1 (18.9 oz) box strawberry cake mix
1/3 cup oil
2 eggs
Preheat oven to 375 degrees F.
Combine (dry) cake mix, oil, eggs; shape dough into balls
(1/2 or 3/4-inches). Place on ungreased cookie sheet 2-inches apart. Flatten balls with bottom of glass dipped in flour.
Bake at 375 degrees F for 6-8 minutes (cookie edges should be light golden
brown). Cool on cookie sheet 1 minute, remove.*
*I bake all cookies on parchment paper. (Purchase at
GFS; cut sheets in half - very economical & time saving).
These cookies can made with any cake mix - strawberry,
lemon and butter pecan are also great. You can frost them or eat as is. They can be a soft moist cookie or
crispy if you bake them longer.
You can add nuts or sprinkles to dough for a special occasion.
I have also used a fork or potato masher to flatten cookies and give them a bit of design. These are also great as "whoopee pies" (use marshmallow cream) or ice cream sandwiches (use ice cream slices).
