Recipe: White Bean and Sun-Dried Tomato Spread

White Bean and Sun-Dried Tomato Spread

1 tbsp. olive oil
1 onion, chopped
2 cloves garlic, minced
1 can cannellini white beans
1/4 cup. sun-dried tomatoes
2 tsp. lemon juice
1 sprig. parsley
salt, pepper to taste

Heat oil and saute onion, garlic until onion is just beginning to brown.

Combine all ingredients and process in food processor until completely smooth. Drizzle in 2 tablespoons of water/oil if too thick. Season to taste with salt and pepper.
