Recipe: Yam Parfait

This not the one you requested, but it is a very yummy dessert with pineapple and sweet potatoes. It is from a Louisiana Festivals cookbook.


Yam Parfait

First Layer
Combine:
1 cup all-purpose flour
1/2 cup butter, softened
1 cup chopped nuts
Press in bottom of 9"x13"x2" pan. Bake at 350o for 20 minutes. Cool thoroughly.

Second Layer
Whip together:
1 (8oz) package cream cheese
1 cup powdered sugar
Fold in:
1 cup whipped topping
Spread over crust.

Third Layer
Combine:
2 cups cooked yams, mashed
1/4 cup brown sugar
1 tsp. vanilla flavoring
Beat well. Spread over cream cheese layer.

Fourth Layer
In a one-quart saucepan combine:
2 Tbls. cornstarch
1/4 sugar
Add:
1 (12oz.) can crushed pineapple
Stir until mixture is well-blended. Heat over medium heat, stirring constantly until thickened. Cool. Spread over yam layer.

Fifth Layer
Combine:
1 (3 1/2oz.) instant vanilla pudding mix
2 cups cold milk
Mix according to package instructions. Spread over pineapple layer.

Sixth Layer
Cover top with whipped topping and sprinkle with pecans to garnish.
