Recipe: Zippy Zucchini Skillet

Side Dishes - Vegetables
Zippy Zucchini Skillet
Yield:6 servings

2 Tbls. vegetable oil
4 medium zucchini, thinly sliced
1 medium onion, chopped
1 (16 oz.) can whole kernel corn, drained
1 (4 oz.) can chopped green chilis
2 tsp. seeded & chopped jalapeno peppers
1/4 tsp. salt
1/8 tsp. garlic powder
1/2 cup (2 oz.) shredded Cheddar cheese

Heat oil in a large skillet, add zucchini & onion & saute 10 minutes or til tender. Stir in remaining ingredients except cheese, cook,stirring occasionally, til thoroughly heated. Remove from heat, stir in cheese.
