Recipe: Zucchini Fritters (using BIsquick and Parmesan)

ZUCCHINI FRITTERS

5 tbsp Bisquick baking mix
1/2 cup grated Parmesan cheese
1/4 tsp salt
1/8 tsp ground black pepper
2 eggs, beaten
2 cups grated zucchini
2 tbsp butter

Blend the (dry) Bisquick, parmesan, salt, pepper. Add eggs. Mix zucchini into batter.

Grease hot pan or griddle with butter. Drop batter by spoonfuls into pan and fry 3 minutes on each side.

Serve warm, a delicious way of serving zucchini.

Make 8 to 10 fritters
