I tried to find your requests. I hope some of these will help you. First I have not found a recipe for the potato pancakes like you want. They all have other ingredients in them. The baked one I found was baked at 375o until brown and crispy. They are called Bramborove Livance or Livance Bramborove in Czech. I found them written both ways. Nalesniki is pancakes in Polish, but it is regular pancakes made or filled various ways. I am sending you 4 rice puddings. I hope one of them works for you. The first two are made the same way, just variations on quantities of rice. The other 2 are made a little differently.


Old Fashioned Rice Pudding #1

2 cups dry rice
1 quart milk (scalded)
1/2 cup sugar
1/2 tsp. vanilla
1/2 tsp. mace (opt.)
1/4 tsp. salt
(washed raisins may be added)


Old Fashioned Rice Pudding #2

1/2 cup dry rice
1 quart milk (scalded)
1/2 cup sugar
1/4 tsp. salt
1/4 tsp. vanilla
1/2 tsp. mace (opt.)

INSTRUCTIONS FOR #1 & #2

Combine ingredients in order given. Place in well-buttered and uncovered 3-quart baking dish. Bake at 275o for 4 hours. When serving, you can use sweet cream and cinnamon also.


Rice Pudding
(Ryzovy Nakyp)

1 cup rice
2 cups water
1 Tbls. butter, heaping
1/4 tsp. salt
1 1/2 cup sweet milk
1/2 tsp. nutmeg
sugar
4 egg yolks
4 egg whites
raisins, opt.

Boil rice in water for 5 minutes in uncovered pot. Drain. Put rice in mixing bowl. Add butter and mix lightly with a fork. Add salt, milk, nutmeg, and 1/2 cup sugar. Beat separately, egg yolks and egg whites. Add yolks first to rice and then fold in carefully the whites. Fold in raisins, if desired. Put into buttered baking dish and bake at 350o for about 25-30 minutes. When set, remove from oven, sprinkle with more sugar if desired, and serve warm. For variation, you can add prunes instead of raisins.


Rice Pudding
(Nakyp Ryzovy)

1 cup rice
2 1/2 cups water
1 cup raisins or chopped dates (opt.)
1 tsp. salt
2 tsp. butter

Bring water to boil. Stir in rice, salt, and butter. Bring back to boil. Cover and turn down heat. Simmer for 15 minutes. DO NOT RAISE LID. Set aside for 20 minutes. Uncover and fluff with a fork. Pour rice into a greased 9x13 pan. Sprinkle raisins or dates over rice, if desired.

4 eggs, well beaten
3 1/2 cups milk
1 cup sugar
1 1/2 tsp. vanilla

Add sugar to beaten eggs and beat. Add milk and vanilla and beat. Carefully pour the egg mixture to avoid disturbing the rice.
Sprinkle top with cinnamon or nutmeg. Bake in 350o oven for 45 minutes or until knife blade comes ouut clean.


This is the closest I've come to the prune buns so far.

Fruit Buns
(Budaky Z Ovocem)

1 cake compressed yeast
1 cup lukewarm milk
1/4 cup sugar
1 tsp. salt
2 beaten eggs
1/4 cup shortening
1 1/2 cups flour

Combine first four ingredients; let mixture get bubblely. Add remaining ingredients and beat well. Let raise until double in bulk. Turn out on floured board. Roll to 1/4" thickness and cut in 4" squares. Place 1 teaspoon of sugar, 1 cut up blue plum (prune before it is dried) and another teaspoon of sugar on top of each square. Sprinkle all with cinnamon and pull up corners and close together tightly all around. Place on greased pan; let rise until light.
Bake in 350o oven about 25 minutes.


Bohemian Buns
(Kolace Sateckove Ceske or
Sateckove Kolace)

1 recipe soft yeast dough
2-3 cups prune filling
1 egg beaten
crumb topping
confectioners' sugar


On lightly floured board, roll out raised dough about 1/2 inch thick. Cut into 3 or 4 inch squares. Put a heaping spoon of filling in the center of each. Pull out corners of dough slightly and pinch together over center. Place buns on a buttered baking baking sheet and let rise. Brush with egg and sprinkle with crumb topping (this is optional). Bake in 400o oven for 25-30 minutes. When buns are cool, sprinkle with sugar.

We also make sausage kolaches with the same dough. Boil link sausage until done. Cut into about 3 inch lenths. If it is thick links, slice it in half length ways. Place in center of piece of dough. Bring long sides of dough up over sausage and pinch together; pinch ends together. Place seam side down, tucking in ends on a greased cookie sheet. Let rise; brush lightly with melted butter and bake at 375o until golden brown. Sometimes we put pickled jalepeno slices in with the sausage. Very good!!!


Old Fashioned Bean Soup
(Fizulova Polevka Po Staru)

1 ham bone
1 1/2 cups dry northern beans
3 slices bacon
2 Tbls. flour
salt and pepper to taste

Wash beans and place in large pan with ham bone. Cover with water and bring to boil. Simmer until beans are well done (almost mushy). Add water as needed to keep beans covered. Dice bacon and fry in a medium size skillet until crisp. Add flour, stirring until lightly browned. Add 2 or 3 cups of cooked bean soup to skillet stirring while it thickens. Pour into soup pot and mix well, adding salt and pepper to taste.
I realize this is a little different than what you described. If you didn't want to cook the flour, you could mix it with a little water in a cup as you remembered, then add it to the beans with the bacon and cook it until it thickens.

I am still looking for the mushroom soup and the other potato recipe. If I find anything else, I will post it for you..
