SAUSAGE-ZUCCHINI STIR-FRY
1 pound smoked kielbasa, sliced in 3/4-inch pieces
1/2 cup chopped onion
4 cups shredded unpared zucchini
4 medium tomatoes, peeled and chopped
1 teaspoon lemon juice
1/2 teaspoon salt
1/4 teaspoon oregano leaves
1/4 teaspoon basil leaves
1/4 teaspoon thyme leaves
1/4 cup freshly grated Parmesan cheese
Brown sausage in electric wok or in a skillet. Add a little oil if needed and spoon off any excess, if there is any when meat is done.
Saute onions slowly, until tender, which may take up to 5 minutes.
Add zucchini, tomatoes, lemon juice, salt and herbs. Taste for seasonings. Cook and stir until squash is tender, about 5 minutes.
Sprinkle with Parmesan cheese. Serve using a slotted spoon.
