I Need Some Help, Please.

Hi Gang;
We just received word that some friends will be visiting in a few weeks. He has had a heart attack, bypass surgery and a shunt. He's doing fine, but has to have low fat, low cholesteral and very low sodium. I need ideas and or recipes for three breakfasts, three lunches and three dinners. We usually take guests out to dinner once while they are with us, but with his restrictions I don't know if that is possible. Can some of you help me out? I know about egg beaters and using applesauce in place of oil in baking, but what do I do about the sodium thing with baking?
I know you all will give me some wonderful ideas for meals. Thanks in advance.
