Recipe(tried): breakfast!!

Breakfast and Brunch

Since my father-in-law's heart attack 2 years ago, we have been trying to stay on a semi-strick meal plan. My motto is "substitute"!!! Make the same things, just use the Lower - or no-fat versions of the cooking products!! Instead of sour cream - use fat free SC. You have to mix it at first to allow your taste buds to convert. Here is a breakfast recipe that is so easy, yet low in fat because I substitute! The family loves it!(and thinks it is high calorie and fat!!)

I'm from Texas so I have to spice it up.-- Please alter how you like it!
This is great because it is done the night before!!

TRADITIONAL BREAKFAST CASSEROLE WITH A SOUTHWEST KICK

8 Slices "Light" White Bread, Crusts Removed 2 Cups Egg Product
1 LB Turkey Sausage 1-1/2 C Skim Milk
1 Anaheim Chili, Chopped 1 Teaspoon Dry Mustard
1 Small Onion, Chopped Red and Black Peppers
1-2 Jalepenos, Chopped Dash of Garlic salt,Thyme 2-3 Cups Low fat or Free Grated Cheddar Tabasco to taste

Saute sausage until brown-drain, set aside. Crumble bread. Evenly spread bread in 9X13 casserole sprayed with cooking spray. Layer turkey sausage over bread. Layer chiles and onions over sausage. Layer cheese over onions and chiles.
Beat egg product (I use Better-N-Eggs). Add milk, Mustard, peppers, garlic salt, thyme, and Tabasco. Pour Egg micture evenly over casserole. cover and refrigerate overnight.
Bake uncovered at 350 for 1 hour!!

We like it with Picante and Tortillas!!

Easy lunch is BLTs with turkey bacon and Fat Free Miricle Whip, and WOW chips!! Toast the bread and they will be in heaven!!
