Recipe: Spinach Sauce (for pasta)

Spinach Sauce (for pasta)

1 pound bag frozen spinach, thawed (microwave, if you have one)
1/4 cup milk
1 tbsp melted butter (or, easier, olive oil)
2 cloves garlic, minced
salt and pepper to taste

Put it all in a food processor. Process until spinach is finely chopped and everything combined. If you over-process to the puree stage, kids hate it -- consistency of baby food.

I don't even heat this sauce -- I dump it over hot pasta and let it heat itself up. (The recipe says use 8 ounces spaghetti. I use 16 ounces spaghetti and feed four, plus I have some leftovers.)
