Recipe: Herbed Zucchini

Herbed Zucchini (Zucchini aux. Fines Herbes)

3 med. zucchini
4 T. butter
1 T. chopped mixed herbs: parsley, chives, basil and thyme
salt and pepper

Wipe zucchini with a damp cloth; trim ends. Cut in 1/2" thick slices. Melt butter in large skillet, Add zucchini, sprinkle with herbs, cover and cook over low heat, stirring occasionally to prevent sticking. This takes about 15-18 minutes or until tender. Season to taste with salt and pepper, stir and heat through again before serving.
