Acini de Pepi Salad- makes 25 servings
2 1/2 cups acini de pepi pasta
2 (11oz) cans mandarin oranges
20 oz can pineapple chunks
1 tbsp lemon juice
3 tbsp cornstarch
1/2 cup sugar
3 eggs
1 large tub Cool Whip
1 bag mini marshmallows
Cool acini de pepi pasta in salted boiling water. Drain and rinse well with cold water. Drain fruit, reserving juices. Place fruit in large bowl; add cold acini pasta.
In 1 cup fruit juice, mix lemon juice,sugar,cornstarch, and eggs. Microwave 2 minutes. Stir; microwave 2 minutes. Stir; microwave 1 minute. Stir. Cool slightly; add to pasta and fruit mixture. Refrigerate overnight.
Next day, add marshmallows and whipped cream topping. Serve.
