Recipe: Almost Like Derby Day Pie for Harriett

ALMOST LIKE DERBY DAY PIE
Recipe by: Rita Heikenfeld, Lazarus-Macy's and Ridge Market

...The authentic Kentucky Derby pie is a closely guarded secret and even the name is copyrighted! But I think my pie runs like a horse I bet on a few years ago, it's a close second!

1 unbaked pie crust
3 eggs
3/4 cup sugar
1 cup dark corn syrup
1/4 cup (1/2 stick) butter, melted and cooled
1 teaspoon vanilla
1 1/2 cups chopped pecans
1 cup chocolate chips
Whipping cream for garnish

Preheat oven to 350.

Beat eggs and then beat in sugar, corn syrup, butter and vanilla. Stir in nuts and chocolate.

Bake about 55 minutes or until filling is puffed and crust is golden. Cool and serve with whipped cream. Store in refrigerator.
