Recipe: Alsatian Quiche
Breakfast and BrunchALSATIAN QUICHE
1 (9 inch) pie crust
1 egg white, whisked
FOR THE CREAM MIXTURE:
3 medium eggs
1 cup milk, skimmed (heavy cream tastes better)
1/2 cup onion, minced
1/2 tsp dry mustard
1 dash cayenne pepper
FOR THE FILLING:*
8 piece bacon cooked and crumbled
2/3 cup parmesan or Swiss cheese, fresh grated
1 tbsp butter (for top, optional)
TO BAKE PIE CRUST:
Preheat oven to 350 degrees F. Bake the pie crust 8-10 minutes. Remove from oven and increase oven temperature to 450 degrees F. Remove foil and weights from crust and brush the bottom and sides of the crust with whisked egg white. Bake uncovered about 5 minutes longer in 450 degree F oven.
TO PREPARE THE CREAM MIXTURE:
In a bowl beat the eggs with a whisk, add the cream and beat again. Add the grated onion, dry mustard, and cayenne; beat again.
TO PREPARE THE FILLING:
Sprinkle the bacon in bottom of the pie shell, Sprinkle the Parmesan or Swiss cheese over the bacon. Pour the cream mixture over the bacon and Parmesan. Dot the top with bits of butter if desired.
Place the pan on a cookie sheet and slide into a preheated 375 F oven. It will take about 45 minutes to bake. Cool for at least 20 minutes before serving.
*You can vary this recipe by varying or omitting the solid ingredients as you desire.
