Amaretto Chicken

Amaretto Chicken (Chicken Saronno)
6 chicken breast halves, skinned, boned, cut in 3/4" cubes
3/4 C flour
2 tsp ea curry, garlic powder
1/2 tsp white pepper
Butter and oil
1 lb mushrooms, sliced
2 C chicken broth
Zest and juice of 1 lemon
1/2 C amaretto liqueur
2 tbs corn starch
2 tomatoes
1 pkg frozen green peas
Mix flour, curry, garlic, and pepper. Dredge chicken in flour mixture. Cook in batches over medium heat in oil and butter. Add extra oil and butter if needed. Remove cooked chicken to a casserole and keep warm.
Add mushrooms and saut about 5 min. Stir in lemon zest and juice, broth, and amaretto. Mix corn starch with a bit of water and use to thicken sauce. Return chicken and simmer 5 min. Peel, seed and dice tomatoes. Heat, but do not cook, the peas. Serve chicken mixture over cooked brown rice. Top with peas and tomatoes.

Kahlua Fudge Brownies

o1 1/2 cups flour -- sifted
o1/2 teaspoon baking powder
o1/2 teaspoon salt
o2/3 cup butter
o3 squares unsweetened baking chocolate
o3 large eggs
o2 cups sugar
o1/4 cup + 1 Tb Kahlua
o3/4 cup walnuts -- chopped
Grease a 9" square pan. Preheat oven to 350F. Sift flour, baking powder, and salt together. Melt butter and chocolate together over low heat. Beat eggs and sugar until light. Add flour mixture, chocolate mixture and 1/4 cup Kahlua. Blend well. Stir in nuts. Bake 30 minutes or until done. Cool in pan. Brush with remaining Kahlua.

"Kahlua Chocolate Cake"
Ingredients:
1 (18.25 ounce) box dark chocolate cake mix
4 eggs
1 cup sour cream
1 cup Kahlua (coffee liqueur)
3/4 cup vegetable oil
1 cup semisweet chocolate chips
1 (1 pound) can chocolate frosting
1 1/2 tablespoons Kahlua (coffee liqueur)
Directions:
1 In a large bowl, combine cake mix, eggs, sour cream, 1 cup coffee liqueur, and vegetable oil. Using an electric mixer, beat at low speed to blend. Increase speed, and beat 3 to 5 minutes. Stir in the chocolate chips. Pour batter into greased and floured 10 inch bundt pan.
2 Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until tester inserted in center comes out clean. Cool cake in pan on rack for 30 minutes. Remove from pan, and cool completely.
3 Microwave frosting 15 to 25 seconds, just until soft. Stir with spoon, and add 1 1/2 tablespoons coffee liqueur. Stir well. Drizzle frosting over cooled cake. Makes 10 inch bundt cak

Brandied Sirlion Tip Roast
Prep time: 10 minutes; 8+ hours to marinate
Grilling time: 1-2/3 to 2-1/4 hours for medium + 15 minutes to stand
1/2 cup vegetable oil
1/4 cup brandy
1/4 cup apple juice
1/4 cup Worcestershire sauce
2 cloves garlic, minced
1/4 tsp. pepper
1 3-1/2 pound boneless beef sirlion tip roast
For marinade, combine oil, brandy, apple juice, Worcestershire sauce, garlic,
and pepper. Place beef in a plastic bag set into a shallow dish. Pour marinade
over beef. Close bag. Marinate in refrigerator 8 hours or overnight, turning bag
several times to distribute marinade. Drain beef, reserving marinade. Grill
1 to 1-2/3 hours for rare; 1-3/4 to 2-3/4 hours for medium; or 2-1/4 to 2-3/4 for well-done.

Grand Marnier Cranberry Muffins

1 1/4 cups orange juice
1/4 cup Grand Marnier
3/4 cup canola oil
2 cups chopped cranberries
2 1/2 cups flour
1 cup whole wheat flour
1 1/2 cups sugar
2 tablespoons baking powder
1/2 teaspoon salt
1 1/2 tablespoons chopped orange zest
4 egg whites
Preheat the oven to 400 degrees. Combine the orange juice, Grand Marnier, and oil; set aside while you prepare the batter. In a large bowl, combine flour, whole wheat flour, sugar, baking powder, salt and orange zest. In another bowl, beat the egg whites until frothy. Combine the juice mixture with the beaten egg whites. Add the egg mixture and the cranberries to the flour mixture, stirring just until moist. Using a 1.4-cup measure, divide the batter among 24 muffin cups that have been fitted with paper liners. Bake for 25 min. or until golden brown and puffed.
