Recipe(tried): Apricot Glazed Pork Roast (using apricot preserves, crock pot)

APRICOT GLAZED PORK ROAST

1 can condensed chicken broth, do not dilute
1 (18 ounce) jar Apricot Preserves
1 large onion, chopped
2 tablespoons Dijon style mustard
1 (3 1/2 to 4 pound) pork loin roast

Mix first four ingredients together and pour in slow cooker, add roast and turn to coat.

Cover and cook 7-8 hours or until done. Serve with sauce on the side.

Personal notes:
I wound up shredding the meat because it was so done. It's good on sandwiches or by itself with some of the sauce over the top.
