Recipe: Asian Salad

Asian Salad

Dressing:
1/2 cup rice vinegar
2 teaspoons soy sauce
2 tablespoons sugar
1 tablespoon lemon juice
1 tablespoon sesame seeds
1 tablespoon canola or llight olive oil
1/2 teaspoon red pepper flakes
2 tablespoons water

Mix dressing in a screw-top jar.

Salad:
1 head Romaine lettuce, washed and torn
1 small pack mung bean thread, about 2.5-3 ozs.
1 carrot, coarsely grated (about 1 cup)
1 cup (loosely packed) fresh cilantro leaves
1/4 cup snipped fresh mint leaves
1 small red onion, chopped
1 small bell pepper, chopped
1 small jicama, peeled, and julienned
1-2 cups fresh bean sprouts

Soften the bean thread in very hot water for about 5 minutes, drain and rinse well with cold water. Snip them as they are usually very long.
Drain well. Toss bean thread with remaining salad ingredients and dressing.
