Recipe: Flank Steak Florentine (stuffed with spinach, mushrooms, bread crumbs, cheese)

FLANK STEAK FLORENTINE

2 1/4 pounds flank steak
3 tablespoons butter
1 small onion, diced
1 garlic clove, minced
2 ounces fresh mushrooms, sliced
10 ounces fresh spinach
1 1/2 cups bread crumbs
1 teaspoon basil
1/2 cup chicken broth or white wine
1 1/2 cups grated Cheddar cheese
1/4 cup cashews

Preheat oven to 350 degrees F.

Pound the steak on both sides with a mallet; set aside.

In a large skillet, heat the butter. Add the onion, garlic and mushrooms. Saute lightly for 3 minutes.

Chop the spinach. Add it to the skillet with the bread crumbs, basil and broth.

Spread the stuffing mixture over steak. Sprinkle with cheese and cashews. Roll like a jelly roll. Tie with string every two inches.

Bake, covered, in oven at 350 degrees F, for 2 hours.

Slice in 1-inch servings.

Makes 6 servings
