Recipe: Baked Apples with Cheddar, Country Cobbler

Baked Apples with Cheddar

4 Golden Delicious apples, peeled and cut into 1/2-inch slices
1/2 c. raisins
1/2 tsp. cinnamon
zest of 1 lemon
2 Tbsp. lemon juice
1/2 c. firmly packed brown sugar
1/2 c. flour
1/8 tsp. salt
4 Tbsp. cold butter, cut into small pieces
1 1/2 c. grated sharp Cheddar

Preheat oven to 350 degrees. Combine the sliced apples and raisins in a well buttered 2-quart shallow baking dish. Sprinkle the cinnamon, lemon zest and lemon juice over the mixture. Combine the brown sugar, flour and salt in a small bowl. Add the butter and work with a pastry blender or a fork until the mixture is the consistency of corn meal. Mix the grated Cheddar into the mixture. Sprinkle over the apples and raisins. Bake for 45 minutes until the apples are tender and topping is golden brown.

Country Cobbler

1 1/3 c. sugar
2 Tbsp. tapioca
1/4 tsp. cinnamon
1/4 c. water
1/2 c. walnuts, chopped
1/2 c. raisins
6 c. apple, sliced
1 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/3 c. margarine, soft
1/4 c. milk
1 1/2 c. sharp Cheddar cheese, shredded

Peel apples and slice thin. Combine 1 cup sugar,
tapioca, cinnamon, walnuts and water in saucepan. Bring to a boil, stirring constantly. Remove from heat; add apples and raisins. Pour into 8-inch square baking dish. Sift together flour, salt, baking powder and 1/3 cup sugar. Add margarine, milk and cheese. Mix just until moistened. Spoon over apples. Bake at 375 degrees for 35 to 40 minutes or until golden brown.
