Recipe(tried): Baked Potato Home Fries

Side Dishes - Potatoes

Left over baked potatoes at our house get cubed and fried in oil until they're a nice golden brown. We add chopped onion and bell pepper as they cook and when they're done and still very hot we sprinkle them with shredded cheddar. Good and fattening, but isn't everything?
