Recipe: Bannock Biscuits

Bannock Biscuits
Yield: 15

3 cup all purpose flour
2 tbsp baking powder
2 tbsp granulated sugar
1 tsp salt
1/2 cup lard or 1/2 cup butter
1 cup water or 1 cup milk

In large bowl, mix together flour, baking powder, sugar and salt.

Using pastry blender or two knives, cut in lard until fine crumbs form.

Stirring with fork, gradually add enough of the water to form ball.

Flatten to form circle about 1 inch (2.5 cm) thick.

Using 2 1/2-inch (6 cm) cookie cutter, cut out biscuits, straight down and straight up. Place on baking sheet.

Gather dough and repeat.

Bake in centre of 425 F (220 C) oven for about 30 minutes or until lightly browned.
