Barley Casserole (Baked)
Recipe By : Stone-Buhr Recipes, Cooking with Gourmet Grains
Serving Size : 6

1/2 cup margarine or butter
1 cup chopped onion
1 cup sliced mushroom
1 1/2 cups pearl barley
1 2 oz jar chopped pimientos -- drained
1/4 teaspoon salt
1/8 teaspoon pepper
3 cups beef bouillon

Melt margarine in skillet. Add onions, mushrooms and barley. Cook on medium heat until lightly browned. Place in casserole. Stir in pimiento, salt, pepper and bouillon. Cover and bake in 350F oven for 1 hour or until barley is tender.

Variations: Add fresh herbs; replace pimientos with other cooked vegetables.
