BEEF TIPS AND RICE
2 cups cooked hot rice
1 1/2 to 2 pounds beef stew meat
1/4 cup olive oil
1/2 cup flour, divided
salt and pepper to taste
1 can beef broth
1 small chopped onion
2 cloves garlic, minced
Reserve 2 Tbsp flour. Salt and pepper the remaining flour and coat meat chunks.
Heat oil in heavy, oven proof skillet. Add meat and brown well.
Add reserved flour, broth onion and garlic, salt and pepper.
Bake for 1 hour in 350 degree oven stirring once or twice. If mixture gets too thick add a bit of water. If it is too thin, mix cornstarch or flour with a bit of water and add to beef tips.
Serve over hot rice.
