Swanson Brothy Shrimp and Rice Scampi
Ladle up some real flavor in "big bowl" fashion with Swanson Broth as the aroma of garlic and shrimp rises up from the steaming broth.
2 cans (14 oz. each) Swanson Chicken Broth (3 1/2 cups)
3/4 cup uncooked regular long-grain white rice
1 tbsp. olive oil
1 lb. fresh or frozen large shrimp, shelled and deveined
4 cloves garlic, minced
2 tbsp. lemon juice
2 green onions, thinly sliced
Heat broth in saucepan to a boil. Add rice. Cover and cook over low heat 20 minutes.
Heat oil in skillet. Add shrimp and garlic. Cook and stir 5 minutes or until done.
Place shrimp in bowls. Stir lemon juice into rice mixture and pour over shrimp. Top with onions.
Servings: 4
