Broccoli Cole Slaw with Dried Cranberries and Caraway
Yield: 6 servings
1 16 ounce package broccoli coleslaw
1/2 cup dried cranberries
1 Granny Smith apple, cored, thinly sliced
1/4 cup frozen orange juice concentrate, thawed
3/4 teaspoon caraway seeds
2 tablespoons cider vinegar
2 1/2 teaspoon Vegetable Oil
salt, to taste
black pepper, to taste
In a large mixing bowl, toss together the broccoli coleslaw, cranberries, apple and caraway seeds. In a small bowl, whisk together the orange juice concentrate, vinegar and oil. Season with salt and pepper. Pour the dressing over the slaw and toss. Transfer to a decorative serving bowl and refrigerate at least 2 hours to let the flavors blend.
Presentation Tips:
Great served with ham and steamed asparagus seasoned with a small amount of butter and lemon, if desired.
