Recipe(tried): Broccoli Salad

Maria,

Here's a broccoli salad recipe. It would be nice for the summer if you could find something to replace the bacon with since you are a vegetarian.

1 cup unsalted peanuts
1 cup raisins
1/2 lb. of cooked bacon
1 onion, chopped
1 bunch broccoli flowerets (only)

Dressing:

1 cup mayonnaise
2 T. Sugar
2 T. white vineager


Mix dressing ingredients the night before. Put dressing and nuts in salad just before serving.

Not sure if this will help or not. Just a different idea. I know it's great with the bacon in it. Wonder if you could use imititation bacon bits?
