ACORN SQUASH SURPRISE
4 small acorn squash
1/2 cup boiling water
Salt (to taste)
3/4 cup firmly packed brown sugar, divided use
1 (20 oz) can sliced apples, drained
Ground nutmeg
Wash squash and cut each in halves lengthwise; remove seeds and membrane. Place cut side down in a shallow baking pan; add 1/2 cup boiling water.
Bake at 350 degrees F for 45 minutes or until squash is tender. Remove from oven and increase oven temperature to 425 degrees F.
Turn squash cut side up in pan, and sprinkle each with salt and 1 tablespoon brown sugar.
Combine apples and remaining brown sugar; spoon into squash cavities. Sprinkle with nutmeg.
Bake at 425 degrees F for 10 minutes or until thoroughly heated.
Makes 8 servings
