Recipe: Cajun Crab Stuffed Mushrooms (dipped in butter before baking)

CAJUN CRAB STUFFED MUSHROOMS

12 mushrooms, get the largest you can find
1 cup crab meat (canned works well in this dish, just rinse and pick over the meat for shells)
2 Tbsp minced fresh parsley
1 Tbsp bread crumbs
1 Tbsp onion, minced
1 Tbsp Parmesan cheese, grated (plus more for topping, if desired)
Salt to taste
1 egg, beaten
Hot sauce to taste
About 1/4 cup melted butter

Remove the stems from the mushrooms and finely mince.

In a bowl, mix chopped mushroom stems with crab meat, parsley, bread crumbs, onions, cheese and salt. Add beaten egg and hot sauce.

Dip each mushroom cap into melted butter then stuff with the crab mixture. Place on a baking sheet and sprinkle with additional Parmesan, if desired. Drizzle remaining butter over the mushrooms.

Bake at 350 degrees F until tender about 30 minutes.

Serve hot.
