Recipe: California Walnut Cheese Ball or Log

Makes 1 ball or log
3 cups (750 mL) shredded old white Cheddar cheese
1/2 cup (125 mL) soft butter
1 minced clove garlic
1/2 tsp (2 mL) onion powder
1/2 tsp (2 mL) Worcestershire sauce
2 tbsp (30 mL) finely chopped fresh chives
1 tbsp (15 mL) port or sherry
3/4 cup (175 mL) chopped toasted walnuts
In food processor, combine Cheddar, butter, garlic, onion powder, and Worcestershire sauce; pulse until smooth. Pulse in chives and port or sherry just until mixed. Remove to bowl, cover and chill until slightly firm.
Shape into ball or log; roll in the chopped toasted walnuts. Wrap in plastic wrap; chill until firm.
Allow to rest at room temperature for 30 minutes before serving.
