Baked Apple with California Walnut Filling

Makes 4 servings
4 large apples
1/3 cup (75 mL) coarsely chopped walnuts
2 tbsp (30 mL) dried cranberries or raisins
1/4 cup (50 mL) brown sugar
1 tbsp (15 mL) butter
1/4 tsp (1 mL) ground cinnamon
1/4 cup (50 mL) apple juice
Remove core from apples, without going all the way through the bottom, and pierce skins with fork; place in baking pan just large enough to fit.
In small bowl mix together the walnuts, dried cranberries or raisins, brown sugar, butter and cinnamon. Fill apples with mixture; pour apple juice over top.
Bake in 400F (200C) oven for 40 minutes or until fruit is tender. Baste with juice several times.
