Recipe: Cheesy Corn Frittata (using cooked rice and ham - with make ahead and microwave versions)

1 1/2 cups cooked rice
1/4 lb. Velveeta Pasteurized Process Cheese Spread, sliced
3 eggs, beaten
1 (8 3/4 ounce) can cream style corn
1/2 cup chopped ham
1/3 cup Miracle Whip salad dressing Dash of pepper
additional Velveeta slices for top (optional)
Preheat oven to 350 degrees F.
Place rice in 10x6-inch baking dish. Top with process cheese spread.
Combine remaining ingredients; pour over process cheese spread.
Bake for 30 minutes.
Top with additional process cheese spread, sliced, if desired. Let stand 5 minutes before serving.
TO MAKE AHEAD:
Prepare recipe as directed except for baking; cover. Refrigerate up to 4 hours. When ready to serve, preheat oven to 350 degrees F. Remove cover from frittata and bake for 45 minutes. Continue as directed.
MICROWAVE DIRECTIONS:
In 1-qt. microwave-safe measure, combine eggs, corn, ham, salad dressing and pepper. Microwave on High 2 minutes, stirring after each minute. Using 10x6-inch microwave-safe dish, assemble recipe as directed. Cover with plastic wrap, vent. Microwave on High 7 to 9 minutes or until almost set, turning dish every 3 minutes. Top with additional process cheese spread, sliced, if desired. Let stand, covered, 5 minutes before serving.
Servings: 4-6
