Recipe: Chicken Cocktail Log

Chicken Cocktail Log

2 packages (8 ounces each) cream cheese, at room temperature
1 tablespoon bottled steak sauce
1 teaspoon curry powder
1 1/2 cups minced cooked chicken
1/3 cup minced celery
1/4 cup chopped parsley
1/4 cup chopped blanched almonds

In a medium-size mixing bowl, beat together cream cheese, steak sauce, and curry powder until well blended. Blend in chicken, celery, and 2 tablespoons of the parsley. Turn out onto plastic wrap and mold into a 9-inch log. Wrap and chill until firm, at least 4 hours.

To garnish log, toss together almonds and remaining parsley in a baking dish. Roll chicken log in parsley and almonds to coat.

Serve with crackers or toasted French bread.

Note: To make in food processor, chop almonds with 2 tablespoons parsley and set aside. Without washing bowl, chop celery, then chicken. Add cream cheese, steak sauce, and curry powder and process until blended.
