Chicken Parmesan Risotto

(Adapted from her recipe)
1 TBSP olive oil
1 large tomato chopped
1 (10 3/4 ounces)can cream of chicken soup
1 2/3 cups chicken stock
1/2 cup grated fresh parmesan cheese
1 tsp Italian seasoning (optiona)
2 cups Rice, uncooked
Heat oil in skillet. Chop tomato. Add soup, Stock, Parmesan cheese & seasoning; stir. Heat to a boil. Stir in rice & tomato; cook on medium high until the liquid is absorbed. When it is dry, move the rice from down up, lower the heat & cover. Cook for 18 additional minutes in Low heat. Makes 4 servings (Carol's recipe is with a chicken breast. You can add the chicken, sliced as for fajitas, at the beginning of the process).
