Fresh Peas
2 pounds of fresh peas
1 large onion, diced
2 sweet potatoes, quartered
3 tablespoons oregano
Crushed red pepper flakes, to taste
Salt and pepper, to taste
Cut up ham or ham hock for flavoring. Combine all ingredients, cover with water and let cook about 1 1/4 hours. Keep enough water in pot to cover, but not an excessive amount. After peas, potatoes and onion are tender, serve with corn bread.
