Roasted Garlic and String Beans

2 pounds blue lake string beans
1 head garlic
3 tablespoons olive oil
salt
Preheat oven to 450
Clean the string beans by snipping off the ends, then wash and dry them. Do not cut them in half.
Separate all the garlic cloves and remove their husks by smashing them with the broad end of a knife blade. Don't crush them to pieces though, just mash them enough to pop the skins off and make them rather soft and juicy so they will caramelize when roasting.
Toss the beans and garlic in the olive oil to coat, and spread all in an even layer on a cookie sheet or jellyroll pan. Make one layer if possible.
Put the cookie sheet in the oven and turn the oven down to about 375. Let the beans and garlic roast for about 20 minutes, tossing and turning them occasionally so they brown evenly. They're best when golden, and slightly shriveled but not completely dry.
Serve with other roast veggies or alone as a barbeque starter or antipasto.
The garlic is GREAT with baguette slices and a little brie, or alone. It's like candy.
