Hi....Just saw your note looking for a Pennsylvania Dutch recipe....I was
just looking thru my Mom-in-laws cookbooks and found an old PA Dutch
recipe book and included is what I think you are looking for
Here goes:
1 large chicken (cut in portions)
4 to 5 large potatoes
3 large onions
Salt and pepper
Pie Dough
Recipe for Pie Dough
3 cups flour
1 cup lard or other shortening
1/2 teaspoon salt
ice water
Add salt to the flour, then rub flour and shortening together. Add enough
cold water to make a dry paste.
For Pot Pie
Wash, clean and cut chicken into individual portions. Place a layer
of chicken in the bottom of a large iron kettle and cover with thick slices
if raw potato, then with slices of onion and salt and pepper. Roll dough
out rather thick and cut in 2 inch squares and place on top of onion.
Continue untilo kettle is filled having top layer of pie dough. Add water
to cover contents halfway. Cover kettle tightly and cook over a low flame
until chicken is tender.
