Recipe: Cinnamon Apple Rings (Microwave), Impossible French Apple Pie, Honey Baked Apples

Washington State is not only famous for Starbucks Coffee (hee, hee) and Microsoft. Fresh seafood, potatos, and apples are also part of our pride.

Here are a few simple apple recipes. I hope they help with your project.

Cinnamon Apple Rings (Microwave)

3 tb Butter or margarine
2 tb Lemon juice
2 tb Honey
1/4 ts Ground cinnamon
4 md Cooking apples; unpeeled,
-cored, and cut into 1/2" rings

Place butter in a 12" x 8" x 2" baking dish.
Microwave at HIGH for 50 seconds or until
butter melts. Stir in lemon juice, honey, and
cinnamon.

Place apple slices in butter mixture,
turning to coat both sides.

Cover with heavy-duty plastic wrap.
Microwave at HIGH for 5 to 6
minutes or until apples are tender,
giving dish a half-turn after 2
minutes. Let stand 2 minutes before serving.

Yield: 6 to 8 servings.

"Impossible" French Apple Pie

--Pie Ingredients--
6 c Apples; tart,sliced & pared
1 1/4 ts Cinnamon; ground
1/4 ts Nutmeg; ground
3/4 c Milk
2 tb Margarine or butter;softened
2 Eggs
1 c Sugar
1/2 c Bisquick or baking mix

---Streusel Ingredients---
1 c Bisquick or baking mix
1/2 c Nuts; chopped
1/3 c Brown sugar; packed
3 tb Margarine or butter; firm

Preheat oven to 325F. Grease pie plate,
10"x1 1/2". Mix apples and spices;
turn into plate. Beat remaining ingredients
except for Streusel till smooth; 15 seconds
in blender or 1 minute with hand beater. Pour into
plate. Sprinkle with Streusel. Bake till knife
inserted in centre comes out clean, 55-65
minutes; cool.

STREUSEL:
Mix 1 cup Bisquick, 1/2 cup chopped nuts,
1/3 cup packed brown sugar and 3 Tbsp firm
margarine or butter till crumbly.Honey Baked Apples

6 large apples
6 tablespoons honey
1/4 cup orange juice
2 teaspoons sugar
1/2 teaspoon ground nutmeg

OVEN: 400

Core apples, being careful not to
cut all the way through to the bottom.

Peel about 1/3 of the way down
from the stem end.

Combine honey and orange juice.
Pour into centers of apples.

Pour a little hot water in the bottom
of a baking dish and set apples in the
dish.

Bake for 50 minutes or til apples are tender.

Sprinkle tops with sugar and nutmeg.
Run under broiler before serving.
