Recipe: Onion Braised Beef (using condensed onion soup)

ONION BRAISED BEEF

4 medium carrots (about 1/2 pound), halved lengthwise
1 (2 pound) boneless chuck steak (1-inch thick), well-trimmed
2 tablespoons shortening
Dash salt
Dash paprika
Dash pepper
1 (10 3/4 ounce) can Campbell's Condensed Onion Soup
3 medium potatoes (about 1 pound), quartered

Cut carrots into 3-inch pieces; set aside.

In large heavy pan, brown steak in shortening; pour off fat.

Season steak with salt, paprika, and pepper. Add soup. Cover; cook over low heat 45 minutes.

Add carrots and potatoes. Cook 45 minutes more or until meat and vegetables are done. Stir occasionally. Spoon off fat.

Thicken sauce if desired.

Makes 4 servings
