Coconut Delights

2 2/3 cups coconut
1 1/2 cups confectioners sugar
1/4 cup butter
2 tbsp hot water
1 tsp vanilla
8 oz semi-sweet chocolate, melted
Combine coconut, sugar, butter, water, and vanilla in a bowl. Stir until blended. Shape rounded teaspoonfuls of the mixture into ovals and place on wax paper. Put each piece on a fork and spoon chocolate over to coat. Place on wax paper until chocolate is firm.
