Recipe(tried): Cold Fresh Cranberry Dessert

COLD FRESH CRANBERRY DESSERT

This is fantastic!

FRUIT MIXTURE:
2 cups fresh cranberries, ground (1/2 pound)
1 large banana, diced (1 cup)
1 1/2 cups sugar, divided
CRUST:
2 cups graham cracker crumbs
6 tbsp butter, melted
FILLING:
1/2 cup butter, room temperature
2 eggs (pasteurized)
1/2 cup pecans, chopped
TOPPING:
1 cup whipping cream

FRUIT MIXTURE:
Grind cranberries. Combine with diced banana and 1/2 cup of the sugar; set aside.

CRUST:
Combine graham cracker crumbs, and 6 tblsp melted butter. Press HALF the crumb mixture into bottom of a 9x9x2-inch pan or glass baking dish.

FILLING:
Cream 1/2 cup butter with the remaining 1 cup sugar until light.

Add 2 eggs and beat until fluffy.

Fold in 1/2 cup chopped pecans. Spread over the crumb mixture in the pan. Top with the fruit mixture.

TOPPING:
Whip 1 cup whipping cream just until soft peaks form; spread over all.

Sprinkle with remaining crumbs, pressing down slightly. Chill 6 hours or overnight.

Yield: 12 servings
