JUST THE BEST CARROT-RAISIN SALAD

Makes a large salad for a gathering.

7 to 8 large carrots, peeled and coarsely grated
1 cup raisins
1 1/4 cups mayonnaise
3 tbsp honey
3 tbsp vinegar
1 tsp cinnamon

In a large bowl, place grated carrots and raisins.

In a small bowl, mix together the mayonnaise, honey, and vinegar.

Add the cinnamon and mix very well. Pour over grated carrots and toss.

Let marinate at least 2 hours or longer if possible before serving.

Will keep well for 1 week.
