BU UELOS DE MAIZ (CORN FRITTERS)
Servings for 8
1 cup water
1 tsp sugar
1/2 tsp salt
1/2 tsp ground cumin
pinch of cayenne pepper
ground black pepper to taste
1 stick unsalted butter
3/4 cup all purpose flour
1/4 cup yellow cornmeal
1 can drained corn
3 large eggs
Corn or Canola oil for deep frying
Combine water, sugar, spices & butter in a saucepan. Heat until butter melted. Stir well & remove the pan from the heat. Add flour & cornmeal to saucepan, all at once, and whisk until mixture is thick & smooth. Add the drained corn. Add the eggs, one at a time, using wooden spoon to beat after each addition. (Mixture will be thick). Heat 1 inch of vegetable oil in skillet until it reaches 375 F. Drop the corn mixture by spoonfuls into the hot oil. Fry, turning once, until puffed & golden. Drain on paper towels & serve.
