SAUTEED ASPARAGUS WITH SHIITAKE MUSHROOMS
4 servings
8 oz pencil thin fresh asparagus, trimmed
8 oz fresh shiitake mushrooms
1/2 stick unsalted butter
1/3 cup minced shallots ( I use onion if I dont have shallots)
2 tsp ground ginger
1/2 tsp salt
black pepper to taste
1/4 cup dry vermouth or sherry
1 tsp orange zest slices chopped
Cut asparagus spears in 1/2 lenghtwise, 7 in 1 inch pieces. remove stems from mushrooms. Cut the mushrooms in strips. Melt the butter in wok & add the shallots & ginger. Saut until brilliant. Add the asparagus & mushrooms. Season w/ salt & pepper & cook for 2 minutes. Add the vermouth & Cover. Cook for 2 minutes, shaking the pan once or twice, Sprinkle with the orange (fresh) zest. Cook 1 more minute. Serve. Delicious!
