Crabmeat Indienne

Serves 4
Excellent served over rice.
3 tbsp butter
1 tbsp finely chopped onion
4 tbsp flour
2 tsp curry powder
2 cups chicken broth
1 1/2 cups crabmeat
Melt the butter in a saucepan. Add the onion and cook over low heat for 3 minutes, stirring often.
Stir in flour and curry powder and cook 2 minutes more.
Add the chicken broth slowly and cook and stir for 5 minutes.
Add the crabmeat and cook gently only until heated through.
