Recipe(tried): Cream Cheese Scalloped Potatoes

Sarah, here is a simple Scalloped Potato recipes that you might like. It takes advanced planning as it should chill overnight before baking. But I have yet to find anyone who doesn't want the recipe.

Cream Cheese Scalloped Potatoes

8 to 10 cups cooked potatoes, peeled and diced
6 tablespoons butter
4 tablespoons all-purpose flour
2 teaspoons salt, or to taste
1/4 teaspoon ground black pepper
3 1/2 to 4 cups milk
8 ounces cream cheese, softened
1 small jar diced pimento, drained
1/2 small can French Fried onion rings

In saucepan, melt butter. Whisk in flour, salt and pepper and continute to cook until bubbly. Whisk in milk and cream cheese and continue to cook until cream cheese is melted and mixture is smooth. Combine potatoes, pimento and sauce mixture. Stir gently to combine. Spoon into greased casserole (I use a greased 13x9 inch glass baking pan.) Cover and chill overnight. When ready to serve, bake at 350 degrees for 30 to 40 minutes. Remove from oven. Spinkle with onion rings. Return to oven and bake an additonal 10 minutes.
Makes 8 servings.
