Recipe: Creamed Ham and Eggs (served over rice, noodles or toast)

CREAMED HAM AND EGGS

2 tbsp. butter
2 tsp. minced onion
3 tbsp. flour
1 tsp. salt
Dash of black pepper
1/4 tsp. dry mustard
1 cup milk
3 hard-cooked eggs, sliced
1 cup cooked ham, cubed
Hot cooked rice or noodles or toast (for serving)

Melt butter in frying pan; cook onion until golden.

Stir in flour, salt, pepper and dry mustard until a thick paste. Whip in milk; cook, stirring constantly, until thickened.

Stir in eggs and ham; heat through.

Serve over rice, noodles or toast.
